Chinese Hot Chili Sauce

              Ingredients:

17 red chilli peppers
19 garlic cloves
1 teaspoon of sugar
1 tablespoon of salt
2 tablespoons of vinegar
1000 grams of grated tomatoes


             Instructions:  

Put the whole garlic cloves and unevenly chopped peppers into the food processor 
Process them until you have a paste


Then in a pan heat the olive oil and pour the paste in
Stir it for 5 minutes


Add the grated tomatoes, vinegar, salt and sugar



Cook for 30 minutes in law heat

                            

There you go!
Put your delicious sauce into jars and and put them into your fridge after they reach the room temperature.
Keep them in your fridge. Use them whenever you want.



Brunch Pizza

              Ingredients for the dough:     

Slightly more than one cup all purpose flour 
Half a pack dried yeast
Half a cup warm water
1 tbsp olive oil
Half a  teaspoon dried basil
Half a teaspoon oregano
Half a teaspoon garlic
Half a teaspoon paprika
A teaspoon salt
Half a teaspoon sugar
            

              Ingredients for the topping:

1 tablespoon of hot pizza sauce
A cup of spinach leaves chopped
4 medium mushrooms thickly sliced
One beef julienned sausage 
Half a tomato julienned
And 2 cups of cheese (any kind that can melt)
2 eggs
1 green pepper
pepper and salt and rosemary to season


              Instructions:

First mix the dry ingredients of the dough.
Then add the water and olive oil and mix them well
Keep it in a warm place with a plate on for around 1 hour.


Make your pizza dough into a 18 cm round thin shape


Place the hot sauce, then  the cheese

Then put the rest of the  ingredients
Season with black pepper, salt , and rosemary
Place the pan in the pre-heated(180C) oven and cook for 15 mins. 

Take the pan out , place the eggs that you just cracked on the pizza 
Season the eggs with salt and pepper



Put the pan back in the oven and cook for another 5-7 minutes

Poached Eggs on Toast

               Ingredients:

2 eggs
4 glasses of water
1 tablespoon of cider vinegar
4 slices of smoked chicken
2 slices of bread
2 slices of cheddar cheese (you can decide on how much to add depending on the size of your breads)
4 leaves of fresh basil
1 teaspoon of salt and black pepper


              Instructions:

Pour the water, cider vinegar and salt into a deep pan and heat it until the water starts to boil
Turn down the heat when it starts to boil and crack one of the eggs into a soup ladle
Dip the soup ladle for 30 seconds before you let go the egg and follow the same process with the other egg
Cook the eggs in the water for 2-3 minutes and in the meantime put the slices of smoked chicken on your breads and put them in the oven until the smoked chicken gets crispy
Take the eggs out with the help of a slotted spoon


Put the cheddar cheese on the slices of smoked chicken and bread while they are still in the oven and wait for 2 minutes


Get the breads out, put the eggs on it and decorate your breakfast with some fresh basil


You can serve your breakfast with some tomatoes and a green apple.

Green Chicken Kebabs and Baked Potatoes

               Ingredients for the green chicken kebabs:

100 ml (2 table spoons) natural yogurt
2 garlic cloves, crushed
2 teaspoons of grated fresh ginger, ground cumin and salt
1 green chili, deseeded and finely chopped
Large handful of chopped coriander
Small handful of chopped mint
4 tablespoons of lemon juice
6 pieces of boneless chicken thighs, cubed


               Ingredients for the baked potatoes:

2 medium sized potatoes, peeled and cut into thin rounds
3 teaspoons of red pepper flakes, dried basil, dried mint, dried rosemary, chili pepper powder
2 tablespoons of olive oil

               Instructions for the green chicken kebabs:

Place the yogurt, garlic, ginger, cumin, salt, ground coriander, chili, chopped herbs, and lemon juice in a blender or food processor and blend until fairly smooth.


Place the chicken in a mixing bowl, add the mixture on it.
When the mixture is all around the chicken cubes, thread the chicken pieces on to 8 bamboo skewers and place them on a large pan. Cook them for 15-20 minutes, turning frequently until they are cooked and browned.

             
                Instructions for the baked potatoes:

Place the potatoes onto a greaseproof paper and add the olive oil and the herbs on it
Mix them all until you season all the potato pieces fairly


Cook them in a pre-heated (200°C) oven for 30 minutes.
Enjoy your meal with a green salad.

Cous Cous With Spinach Chicken and Mushrooms

         Ingredients:

10 medium spinach leaves
A small onion chopped
6 garlic cloves chopped
1 green pepper
200 gr chicken breast fillet thinly sliced
5 mushroom cat in small pices
1 1/2 Cup cous cous
50 gr grated parnesan
50 ml white wine
Around 3/5 cups of hot water
1 teaspoon black pepper
1 tsp paprika
3 tsp salt 
1 tsp dried basil




      
           Instructions:

Stir the olive oil and add the onion,pepper and garlic


Then we add the mushrooms, chickens , and spinach one by one. 

Then add the wine and cook for about 5 mins until the alcohol evaporates
Add the hot water and cook until at low heat.


And it´s ready. Enjoy with some fresh basil.

Smoked Chicken and Cheddar Sandwiches

      Ingredients (for 4 sandwiches) :

A whole wheat French baguette
12 thin slices of smoked chicken breast
8 slices of cheddar cheese
Fresh basil leaves
Black pepper salt
4 leaves of green salad
Pickled jalapeno and cucumber
Mayonnaise and hot sauce 





      Instructions:

Cut a long baguette into four and cut each bread in half
Put some mayonnaise, and hot sauce on the bread
Place the chicken slices, cheddar and basil, flavor with salt and pepper
Put the sandwiches in the pre-heated  oven(200c) for around 7 mins until cheese is melted. 
Then take the sandwiches out and add the pickles and other green stuff

Personally, i don't want the pickles and the greens baked this is why i add them up later(I baked the sandwiches with the basil to have the flavor mixed with cheese)





Warning: both hot sauce and jalapenos might be too hot to eat. You can choose only one or have them both in reasonable amounts.

Stuffed Peppers*

Ingredients:

        For the mixture to stuff the peppers:

125 grams minced meat (beef and lamb mixed)
3/4 cup of white rice
1 medium tomato (peeled and finely chopped)
1/4 cup vegetable oil
A small onion chopped
1 tea spoon of salt, paprika, black pepper, dried mint, sumac

        For the sauce:

1 table spoon of tomato and pepper paste
1 head of garlic (half of it minced)
Enough water to cover the peppers (around 4 cups)
1 table spoon of pomegranate sauce
2 tea spoons of salt
1 tea spoon of dried spoon and paprica

       And of course:

10/11 big green peppers

Instructions:

Cut the peppers' heads and take the seeds out but don't throw the heads away. 

For the mixture, add all the ingredients into a bowl and knead dough until you have a homogenous mixture
Stuff 2/3 of each pepper with the mixture, place them vertically into a deep pan and cover them with the heads of the peppers.

                                                 That's how you stuff the peppers.

For the sauce, place the garlic, tomato and pepper paste and 3-4 cups of hot water into a bowl and mix them.



           
Ready to be cooked with its delicious sauce.


After placing the stuffed peppers, pour the sauce on it and cook it around 50-60 minutes on the stove.


And finally on the table with salad and -of course- flowers.
