Guacamole and Salsa Sauce

             Ingredients for the Guacamole sauce:

avocado
2 tablespoons of lemon juice
1 chili pepper
1 medium tomato
1/2 onion
3 garlic cloves
1 teaspoon of salt, black pepper and coriander
2 tablespoons of olive oil


              Instructions for the Guacamole sauce:
    
Peel the avocado and cut it into small pieces.
Chop the chili pepper, tomato and onion into little squares.        
Put them all into a food processor with the lemon juice, olive oil and spices.
Process them until you have a smooth and nicely mixed sauce.


  Ingredients for the Salsa sauce:

1 onion
1 chili pepper
1 tablespoons of vinegar and lemon juice
2 tablespoons of olive oil
3 tablespoons of grated tomatoes
1 medium sized tomato
5 garlic cloves
1 teaspoon of salt, black pepper and coriander


Instructions for the Salsa sauce:


Chop the onion, chili pepper, tomato, garlic cloves into little squares.
Mix them well with the olive oil, vinegar, lemon juice and grated tomatoes.
Add the spices and mix your salsa sauce for the last time.

Chicken Nachos

             Ingredients:

2 packs of Doritos Nacho Cheese
1 chicken breast
2 tomatoes
10 slices of cheddar cheese
2 tablespoons of jalapeno
1 can of mexican beans
3 tablespoons of sliced olives
3 tablespoons of milk corn
2 teaspoons of chili powder
2 teaspoons of dried coriander
2 teaspoons of black pepper
Half of a white onion
5 garlic cloves


              Instructions:

Cut the chicken breast into thin slices.

Put some olive oil into a deep pan and heat it. Add the chopped onion and the garlic cloves and stir them until they get golden brown.

Add the sliced chicken breast, then the grated tomatoes and finally the mexican beans.
Continue stirring for 10 minutes.
Then add the chili powder, dried coriander and black pepper.


In a mixing bowl, mix the jalapeno, sliced olives and mixed corn.

Place the chips on a baking tray and pour that mixture on it. Cover them all with your cheddar cheese.


Cook it in a pre-heated (220C) oven for 10 minutes.

Tomato, Ham and Pesto Omelette

             Ingredients:

2 eggs
1 tablespoon of pesto
1 tomato
A slice of ham
1/2 tablespoon of butter


            Instructions:

In a mixing bowl, crack the eggs, add the pesto and sliced ham.


Chop the tomato into little squared pieces.

Heat the butter in a pan and add your mixture on it.
As mixture sets at the edges, with spatula, gently lift cooked portion to allow uncooked egg to flow underneath. Cook until bottom is set and top is almost set, about 5 minutes.



Cover the half of your omelette with chopped tomatoes and overlie it with the other half.

Mexican French Fries

                     Ingredients:

250 grams of meat
1 onion
1 tablespoon of butter
100 gram of cheddar cheese
2 tablespoons of olive oil
8 garlic cloves
5 potatoes
10 mushrooms
2 tomatoes
4 tablespoons of cream
A large handful of parsley

      
                                    
                        

                   

Instructions:

Chop the meat, garlic and onion into very little pieces and grate the tomatoes.
Melt the butter in a deep pan and add the olive oil. Mix them and heat them well.
Add the onion and stir until it gets golden brown.
Add the mushroom, garlic cloves and the meat.


Cook that mixture for 10 minutes then add the cream, the parsley and the cheddar cheese.


In the mean time make sure that your french fries are ready.


Put your fries on a large plate and dress it with your hot sauce.

Easy Pizza

              Ingredients:

6 slices of bread (any kind)
100 gram of mozzarella cheese
A small handful of fresh basil
6 mushrooms
Pepperoni (quantity is optional)
1 green pepper
1 tablespoon of ketchup

              Instructions:

Chop the basil, pepper and mushrooms and mix them with pepperoni and mozzarella cheese.

Split the ketchup onto breads.

Put the mixture on your breads which you applied ketchup on.


Cook your easy pizza for 20 minutes.

Creamy Garlic Bread

              Ingredients:

6 slices of bread
6 garlic cloves
100 gram of grated mozzarella
100 gram of butter
3 tablespoons of mayonnaise
2 tablespoon of olive oil
Large handful of chopped parsley


             Instructions:

Put the butter, garlic cloves, mayonnaise, olive oil, cream and parsley in a food processor.


Process them well and pass that mixture on your breads equally.


Put your breads in a preheated(180°C) oven and cook them for 20 minutes.

Chicken and Vegetable Noodle

               Ingredients:

4 packs of noodle
2 carrots
10 cloves of garlic
A small onion
8-10 mushrooms
2 green peppers
1 red pepper
1 zucchini
250 grams of chicken thighs
1 tablespoon of chili(we used our homemade chili sauce, for the recipe: http://eatandshareit.blogspot.com/2013/11/chinese-hot-chili-sauce.html)
2 cups of soy sauce
3 spring onions
1,5 cups of bean sprouts
1/2 of white wine


              Instructions:

Fill a pan with 2 liters boiled water, add the salt and cook your noodle as prescribed on the package.
In the mean time, add some olive oil into a deep pan or a wok. 


Add the onion and garlics, chicken, peppers, chicken, mushrooms, zucchini, carrot, spring onions (in that order, all julienned) and mix them all.
Add the soy sauce and wine, keep mixing.


When all those ingredients are equally mixed, lower the heat down, add the bean sprouts and add your cooked noodle on them. 


Your noodle is ready!

Basil-Cream Potato Salad


             Ingredients:






3 pounds of potatoes


50ml hot beef broth
2 cups loosely-packed fresh basil leaves
2 to 3 cloves garlic, minced
1 tablespoon freshly-squeezed lemon juice
1 teaspoon freshly-ground pepper 
1 tablespoon pesto sauce
1/2 tablespoon coarse salt
1/2 tablespoon prepared honey mustard
1/2 cup cream
1/2 cup mayonnaise








             Instructions:


Cut the potatoes into bite-sized pieces, put them in a pan and cover the potatoes with water.

Add the salt and cook the potatoes for 20 minutes. When it's read, drain the potatoes and put them in a large mixing bowl.

In a food processor; mix the cream, beef broth, basil leaves, lemon juice, mustard, mayonnaise, pesto and garlic.

Pour this mixture on the potatoes and mix them well.

You can serve your salad warm our put it into your fridge and serve it cold. We decided to decorate ours with parsley and shaved cheddar.






Cinnamon French Toast

            Ingredients:

1 egg
1 glass of milk
1 pack vanilla extract
1 green apple peeled and sliced
2 teaspoons cinamon
1 tbsp brown sugar
A dash of Walnuts
1/2 tbsp butter

           Instructions:

Melt the butter in a pan and add the apple slices, cinnamon, brown sugar and cook them for 10 minutes.            

In a bowl, beat the egg, milk and vanilla. Dip your breads into this mixture and cook your bread in a pan with a very little of butter.                     

                           

 Get your cooked bread and put your apples with cinnamon and sugar on it.
You can decorate your easily made dessert with walnuts, powder sugar or honey (if you like to get it even sweeter).

Beef Stew

                     Ingredients:

500 grams of beef, cut into bite size pieces
1 tablespoon of all purpose Flour
2 tablespoons of olive oil
1 onion, cut into bite size pieces
2 big potatoes, peeled and cut into bite size pieces
1/2 cup of red wine
1 big carrot, peeled and cut into bite size pieces
1 celery, cut into bite size pieces
6 cloves of garlic, chopped
1 tablespoon of tomato paste
2,5 cups of beef broth
1 dried bay leaf, dried or fresh
2 teaspoons of oregano
2 teaspoons of dried rosemary, minced
1/2 cup of Frozen but thawed baby peas
Salt and pepper to season



                 Instructions:


Add the oil to a large pot and preheat it over high heat until the oil is so hot that it starts to smoke a little. 
Add the beef and season with salt and pepper, cook it for about 5 to 7 minutes or until seared well on all sides. Remove from the pan onto a plate and set aside. 



To the same pan with add the onions, carrots, potatoes, garlic, and celery, season with salt and pepper and cook for about 5 minutes or until the veggies develop some color. Add the flour and stir well, continue to stir wile cooking the flour for about 2 minutes. Add the wine and using a wooden spoon, scrape the pan to lift off all those browned bits. 



Add the tomato paste and stir well, add the beef broth, the bay leaf and the thyme and rosemary and bring the mixture up to a boil. Add the browned meat back in and reduce the heat to low. Cover and cook for about 2 ½ hours checking on it periodically. 



After 1,5 hours, remove the lid and turn the heat up to medium high, taste for seasoning and adjust if you feel necessary, add the peas and cook for about 2 more minutes. 

We decided to serve it with plain buttered turkish style noodles and plain yogurt.
